The "CHAR" function lets you insert special characters into your formulas. The challenge is, there are literally hundreds of thousands of options, and no easy way to find the list. (Here's the Google documentation. Good luck with that).
I created the reference list for myself. I'll keep adding to it over time, but feel free to bookmark for your own use.
